My grandmother mentioned that I could substitute oil for apple sauce when baking. I've done this with cakes and it turns out very well, making the cakes more moist. I was wondering if using this substitute in muffins (any variety) would make them less crispy. I really enjoy the "top of the muffin" crispy texture and don't want soggy muffins.

I regularly substitute oil and use applesauce instead. A good way to get a crispy top is to sprinkle with granulated sugar. The fat in the oil is not worth the crispy top.

I have found that although it might make the muffins a bit more moist, they don't usually come out as fluffy because you don't want to over mix muffins.
