The vegetables that are best for your eyesight are those that contain beta carotene or lycopene. Carrots and chili peppers are especially known to help your vision, but so does squash, eggplant, tomatoes, sweet potatoes and yams.

Carrots would be the best vegetable and the best way to eat them is raw but if you want them cooked be sure to steam them this leaves the best amount of nutrients in them.

All green leafy vegetables like spinach, etc. Then carrots, mangoes, squash, pumpkin, green beans, broccoli and sweet potatoes. You can make salads with the veggies that you can eat raw. otherwise cook them or boil them, add spices and seasoning and you are way to go.

One more thing you can try is sweet potato mash instead of regular potato mash. Sweet potatoes are rich in beta carotene and manganese which is good for health.
