Why is my beef stroganoff soupy? Will adding sour cream thicken it up?

Yes sour cream can be used as a thickener. You will want to make sure the sour cream does not curdle when you add it to the sauce. To avoid curdling add room temperature sour cream to the beef stroganoff when the pot is off the heat and at a very lower simmer. You can add a tablespoon of flour for every 1/2 cup of sour cream to help prevent curdling.
