I want to make a ricotta cake that uses ricotta and mascarpone cheeses. I had this type of cake at a restaurant and would like a recipe for it. I contacted the chef at the restaurant but he was unwilling to share his recipe. Can anyone please help????

Not really. It's an Italian cake that uses yellow cake mix and the cheeses. I just don't have a real recipe that defines all the ingrediants and their amounts. – linda Mar 4 at 22:30

It has to be said that it is often difficult to get Italian cake recipes. Baking is a trade secret in Italy - most domestic Italian cuisine does not include baking - only commercial establishments have ovens!

The best I can find is this recipe, but I think I would leave out the cardamom - not very Italian!

I understand why you like this kind of cake - they are sold in Lidl supermarkets (which is why I never learned to bake them). If you are in UK, that might explain why the chef was reluctant to part with the recipe - although there are a lot of specialist bakers who sell exclusively to restaurants, which might also explain something.
