Most lemons I can get in stores have their peel chemically treated, which makes it unfit for consumption. Is there anything I can do (washing it with soap, etc.) so that the peel can be eaten safely?

I would not recommend that. Those treatments will have moved quite deep into the zest.

If you want lemon zest, try to get some from a local farmers market or similar.

I would also go for organic lemons if you can get them as they tend to have much fewer potentially harmful chemicals. – Ikkle Becca Jan 11 at 17:48

As far as I know, organic lemons are not treated. Any treatment that leaves the zest unfit for eating has to be marked, at least here in europe. – brandstaetter Jan 14 at 10:05
