What is your favorite fudge recipes? What are the secrets to making great fudge?

Here's the one I always make and it's super easy and delicious:

1 can (14oz) Sweetened Condensed Milk
1 bag (12oz) Semi-Sweet Chocolate Chips
1 tsp Vanilla Extract

Combine milk and chocolate over hot (not boiling) water, stirring constantly.
When fully melted, stir in vanilla.

Spread evenly into a pan and chill for 2 hrs or until firm.

You could add walnuts if you like or switch out the vanilla extract for Almond or Orange extract for a more unusual flavor.

We use the recipe on the marshmellow creme, but it's important to use chocolate squares, not chocolate chips. Also, don't be afraid to add other flavors, such as almond extract and cocoa to the chocolate fudge. Use the white chocolate squares for other flavors, such as peanut butter or cherry. Make sure you have a good candy thermometer. Use butter, not margarine, and good quality ingredients.

The brand we get is called Jet-Puffed, by Kraft, but yes, that Marshmellow Fluff looks about the same. Marshmellow in a jar! The Jet-Puffed brand has the receipe on the jar. – thursdaysgeek Dec 22 at 4:46
