How do I make a hearty, but easy, chicken noodle soup. I don't like a lot of herbs in soup, and I hate dealing with bone-in chicken. I really want a good recipe for quick and easy soup.

I would put cubeb boneless skinless chicken, sliced carrots, celery, & onions into a pot with plenty of chicken broth. cook on medium-high heat until veggies are tender. Add in the type of noodles you like and the few seasonings you prefer. If you need more liquid just add a little water.

A homemade, yet quick and easy chicken soup is a great alternative to a canned soup. Most of the time you need to take to make chicken soup, is consumed by preparing the ingredients. At your local grocery store, you can find some of these already prepared to save you time. If you chose to prepare these yourself, you will need to first chop some ingredients. Start with about a ½ cup of celery and ½ cup of onion. You will also need ½ pound pre-cooked chopped chicken breast. Next, you will need to gather some other ingredients such as, 4 cans of chicken broth, about 1 can of vegetable broth, 1 cup sliced carrots, and 1 ½ cup of egg noodles. Next, you will need to melt 1 tablespoon of butter in a large pot to cook the celery and onion in for about 5 minutes. Then, you will need to pour in both broths. Stir in your chopped chicken, your sliced carrots, the noodles and about ½ teaspoon of dried oregano and ½ teaspoon of basil. You can also add salt and pepper depending on your taste. Boil all these mixed ingredients, then reduce heat, and let them cook for about 20 minutes.

Here is a recipe that you can use especially if you don't like lots of herbs:

1 pound boneless, skinless chicken breasts, cut into 1/2 inch pieces 2-3 celery stalks, chopped 1 medium onion, chopped 2 garlic cloves, minced 1/2 cup green or red sweet pepper chopped 2 to 3 cans chicken broth (unsalted is fine) 1/4 cup white wine 1 to 2 cups pasta noodles (any shape is fine and amount depends on how thick you want your soup) 2 Tbl fresh or dried parsley

Additional ingredients that can be used for more flavor but not necessary: 1 small turnip chopped, 1/4 cup celery root that has been cleaned and chopped.

Simmer all the ingredients except the pasta for about 50 minutes or until vegetables are tender. Add some water or additional broth if it appears you need more liquid. Add pasta noodles and cook an additional 12 to 15 minutes or until noodles are done. Dish up the bowls and sprinkle a little bit of parsley.

This is my own recipe and the only spice I add to it is a little bit of pepper. The white wine will add a healthier flavor than the use of salt does.
