What can I do to keep fresh peas from losing their color? I usually steam or boil them but they don't stay green. They turn a dark green that doesn't make them look to good. Thank You.

To maintain the fresh color of peas add a few drops of lemon while cooking. You can also boil peas, drain them, and pour cold water over it. |

Peas retain their color when the amount of water used for cooking reduces. so use minimum water |

Use a little oil in the water with a little salt. Do not overcook as that is what will change the coloring darker. The peas will taste better if they are not overcooked because they will not be as mushy. |

It can be that you have a lot of lime in your water. You could try boiling in bottled water, but the best thing is to microwave them with a little water. They retain more flavor and color. This is one of those occasions where using the microwave would be acceptable to any top chef! |

Pea is a frost-hardy, cool-season vegetable that can be preserved in the refrigerator in a bag or a sealed container. Chefs often use a pinch of vit C tablet to keep the bright green color. |

Keep them out of the sunlight. Usually they will say keep them in the sunlight to keep their natural colors. But I notice when you got fresh peas and fresh vegetables that when you keep them in warm areas they tend to mold quickly. Saving time and effort by putting them towards a spot that isnt so warm for them to keep their natural color. |

For bright green, tasty peas take a bag of frozen peas and empty them into a microwave safe bowl and cover with plastic wrap. Microwave for 30 seconds in bursts, tossing in between, until they are the temperature you want. Don't overcook. Cooked this simple way, they don't need any seasoning or water or oil. You get green, fresh-tasting and healthy peas. |
