I am making a green bean casserole for Thanksgiving dinner and am looking to use fresh, healthier ingredients. Any suggestions on how to replace the crispy onions and the canned mushroom soup and still have it be tasty?

This is really not a casserole, but it's my quick and healthy green bean casserole replacement: A. In a microwave safe bowl:
B. Heat ingredients on high power for three minutes C. Add and stir to mix: one pound tipped and tailed fresh green beans D. Heat in microwave for five minutes on high power. E. Stir F. Repeat step D two more times. If you'd like crunch, toast pine nuts in oven at 350 for five minutes and add to beans prior to serving. This dish may be served hot or cold. Happy Thanksgiving |

Take it from me, enjoy your fattening green bean casserole. It tastes good just the way it is and you only really have to eat it once a year! Believe me when I say that if you aren't growing your own heritage grown foods, completely organic, then you really don't know what you're eating. try roasted green beans. it's a big hit at parties and no work at all. 1 lb green beans 1 tbs olive oil black pepper line pan with tin foil, spread out beans, single layer, drizzle oil, coat well. bake at 450 degrees, middle rack, 10 min, toss with tongs, give 10-12 min more. should be black in spots (don't be afraid) and a little shriveled. this is really good for beans that are a little past prime, as starch turns to sugar and they'll be sweeter. i know people that hate green beans and LOVE these. when i have a party i usually make 5 lb for 10 people and there's no leftovers at all. i've never made them ahead of time and broiled to reheat, but i'm sure you could. goes nicely with baked sweet potato french fries, done almost the same way and temperature. |
