So I'm curious about the food I'm buying - but the man in the takeaway isn't giving away his secrets -

I regularly buy Kung Po chicken from my local Chinese takeaway, but the man behind the counter is evasive when I ask about the ingredients - I can understand that, he wants my business!

So, all I have learned from him is that Kung Po means "from the palace", and that there are many versions, depending on which part of China you are from. The stuff he sells is very like sweet and sour with pineapple.

Please give me some recipes. I would be especially grateful if someone Chinese would tell me what I should expect.

I'm not Chinese, but I make this at home for my family. It's super easy and you can add more or less of any of the ingredients to suit your tastes.

Combine the following ingredients in one bowl:

1 ½ tablespoons cold water

2 teaspoons cornstarch

2 tablespoons rice wine

¼ teaspoon ginger

1 ½ tablespoons vinegar

3 tablespoons soy sauce

1 ¾ tablespoons sugar

2 teaspoons sesame oil

1 clove chopped garlic
