Is it better to use glass or silicone cookware in a convection oven?

It really depends on what you are looking for in cookware. The advantage of silicone cookware is that baked goods do not stick to it. The non-stick property of silicone essentially changes the way things bake and may cause some of your baked goods to literally fall apart.

I am always cautious about using plastic in any high heat situation, as there is always a potential for leakage of cancer causing plastic monomers. This may turn out to be a misguided fear, but I am playing it safe and sticking to non-plastic cookware.

I bought a "bunny" silicone cake dish at easter and misread the oven temperature on the dial. The whole thing got too hot.

The dish went very floppy and the cake mix spread out all over. We ate it, cut up like biscuits, but it was not "as advertised", although it went well with coffee!

Cancer - is that the mess you have to scrape off the bottom of the oven when it runs over?
