I've tried several methods but when i make hard boiled eggs they always end up with green tinged yolks and the whites are kind of rubbery. How do you cook them so that they have a nice yellow yolk and soft textured whites? Also sometimes mine peel fine but other times they look like they've been through a war zone after peeling. Is there a trick to peeling them?

The perfect hard boiled egg is easy, once you know the secret. Take a pot with a lid and place the eggs in the bottom. Fill to about 1-2 inches above the eggs with COLD water. Add about 2 TBSP of salt to the water. Heat on high until the water boils. Put the lid on the pan and turn off the heat. Leave the covered pot on the burner and allow the water to cool by itself. Once the water is cool, rinse and peel the eggs. This should prevent the shells from sticking to the eggs and the yolks should be a nice yellow without the green tinge. |

Place eggs in cool water and bring to a boil. Let boil for 2 minutes then cover and remove from heat. Let them sit in the water for 10 minutes then remove and rinse in cold water until cool. Then, peel the eggs! This will create hard boiled eggs that do not stick to the whites. |

The secret to the perfect hard boiled egg is to prick a hole in the bottom of each egg with a pin, this releases pressure during boiling. Cover with cold water in a pan and place over high heat. As soon as the water boils, remove the pan from the heat and cover for 17 minutes. Place the eggs in a bowl of ice water for 2 minutes to stop the cooking. Then, bring the pan of water back to a boil and add the eggs for 10 seconds to expand the shells. Return the eggs to the ice water and roll them to crack the shells. The best way to boil an egg is to use a egg that is at room temperature. I have found if they are cold the shells seem to crack in the boiling process. Fill a saucepan with cold water and place the egg into the water. Place on a medium heat and bring to the boil. Once the water is boiling, allow the egg to continue to boil for a further 3-4 minutes. Remove the saucepan from the stove and empty the hot water immediately from the pot. Run cool water over the eggs, I usually run the water directly into the saucepan with the egg for about 1 minute. This cools the egg down rapidly which prevents the discoloration occuring. Fill the saucepan with cool water and allow the egg to sit in the cool water for about 10 minutes. To make a perfect boiled egg, I personally boil it for 30 mins. low steam not high when its on high your end up cracking it. And if you cook it on low your cook it and it wont be done all the way thru. |

For me a perfect boiled egg is made by placing the egg(s) in the pot, covering with hot tap water, placing on the burner set at high and set the timer for 20 minutes. When the beeper goes off I run cold water in the pot to cool the egg for a minute and then peel. Perfect! |
