Specifically a sweet potato. I have a recipe for sweet potato fries, and I'd like to make them, but Im not sure about how you julienne them properly. Anyone?

When cutting a sweet potato julienne i cut the potato lengthwise into pieces about 1/3 of an inch thick then divide these pieces into two halves and cut 1/3 inch strips again resulting in long thin fries. Some of the pieces along the outside will come out short but don't worry, unless you have a square potato the pieces cant all be perfect. :)
