A few weeks ago I bought a huge package of rice paper rounds. I made the traditional ones with veggie stuffing and a hoisin dipping sauce but I have a ton of them leftover and don't know what else I can use them for. I want to try something different. Is there a way to make a hot appetizer with them?

The only way I have eaten them hot is steamed dim sum. You could fill them with a shrimp and veggie mix, then pop them in a steamer. They really have a slimy texture when steamed. You can try lots of variations on the cold veggie stuffing. I really like the vietnamese versions with mint, basil, pickled vegs, and shrimp, then dipped in a peanut satay sauce.
