I handmake noodles and boil chicken to make homemade chicken and noodles. I am on a very low fat diet and would like to know ways to reduce the fat content and calories of this dish. Do you have any suggestions? Thank you.

One way to make your homemade chicken and noodles even healthier is to make whole wheat noodles or no egg noodles. If your noodle recipes call for butter or oil consider using an extra virgin olive oil instead.

To reduce the amount of fat in your chicken stock be sure to use skinless chicken breasts. Dark meat is fattier and having skin on the meat will also increase the fat. Once your stock is ready strain the stock from the chicken and vegetables. Chill the stock until the fat has risen to the top. You can skim the fat off the top.

An alternative to chilling the stock is to purchase a fat skimming cup. You can find it in any store with the measuring cups. It looks exactly like a measuring cup but it has a lid and is slightly different in that the fat rises to the top, separates and then can be poured off.

Make sure you use chicken breast meat as this is the leanest part of the chicken. Boiling the chicken is good as any fat that is in it will go into the water. Pat down the chicken breasts firmly to get out remaining fat when done boiling. Don't use any other high fat ingredients and you will have a very healthy low fat meal.

Here's a quick, easy and virtually no-fat chicken and noodle recipe. Take raw, boneless chicken strips and cook them in chicken broth with celery, onion, carrots. Once chicken is done, remove from broth. Bring broth to a boil and drop in some no-yolk noodles. Once noodles are done, replace chicken. Salt and pepper to taste.

also check out the book "french women don't get fat". there's a cream of carrot recipe in there that is so good and makes five servings for about $3. NO fat. also think about making your own vegetable stock, all you need is water and vegetables. boil and strain. that's it! you can cook with it or just drink it.
