There's a couple of ways - The traditional way is almost like making jam. Plenty of recipes out there if you search using the Recipe Puppy advanced search with mango as an ingredient and chutney as the keyword. Here is my quick microwave version of Major Grey chutney. I make this in a glass ovenproof butter dish. Put about an ounce of chopped onion in the dish, mix with half a teaspoon of curry powder and a tablespoon of olive oil. Cover and microwave on full power for a minute. Chop a piece of fresh ginger finely to give a heaped teaspoon of chopped ginger (use a level teaspoon of powdered ginger if you can't get fresh). Mix that with the stuff in the dish, cover and microwave another minute on full power. Peel your mango, cut the flesh into small dice. Reserve a quarter of the chopped mango, put the rest in the dish on top of the mix. Scatter a teaspoon of sugar over the top, cover, microwave for two minutes on full power. Stand for a minute. Take the dish from the microwave and mix everything together with a fork, mash it all up! Stir in the remaining chunks of mango, return to the microwave, and give it another 30 seconds at full power.
