<p>In a restaurant I frequent they have this side dish I really love. It's called creamy potatoes with leeks. I have tried multiple times to make a version of this, but I never got to a satisfactory result. </p>
<p>Basically, the potatoes are baked to a relatively soft degree with skin and are coated with thick delicious cream sauce.The potatoes are cut into wedges. There are also leeks in the mixture, which are cut to bigger pieces and seem to retain some of their crunch.</p>
<p>My guess is they prebake their potatoes and the toss them with some bechamel sauce and blanched leeks, but I wasn't able to prove my theory. Does anyone cook a similar sidedish and could provide a recipe? I'm not looking for just some recipe, but trying to reconstruct the technique they use. If I get the chance later, I'll try to post some photos.</p>
